Fresh exotic kiwi jam with Pacific Pectin Mix.

Kiwi Jam

Ingredients

  • 5 ½ Cups Kiwi Fruit, peeled and mashed.
  • 7 ½ Cups Sugar
  • ⅓ Cup Pacific Pectin Mix
  • 2 TB Lemon Juice

Instructions

  1. Place peeled and mashed kiwi in 6 quart saucepan.
  2. Add lemon juice.
  3. Begin heating.
  4. Add the Pacific Pectin mix slowly, while stirring.
  5. Heat to a boil while stirring constantly.
  6. Add the sugar in two parts when boiling begins.
  7. Stir and bring back to a boil
  8. When jam comes to a full boil, stir and continue boiling for 3 minutes.
  9. Remove from heat and skim foam if needed.
  10. Pour mixture into jars.
