Huckleberry Jam

Huckleberry Jam


  • 2 qt. Whole Huckleberries (3.5 Cups prepared, finished)
  • 6 Cups Sugar
  • 1/4 Cup Lemon Juice
  • 1/3 Cup Pacific Pectin Mix


  1. Wash and crush fruit.
  2. Add 1 Cup water to crushed fruit to make 3.5 cups, and add to a 6-8 qt. pot.
  3. Add lemon juice.
  4. Start heating and slowly stir in Pacific Pectin Mix.
  5. Heat to boiling.
  6. Slowly stir in sugar in 2 parts and bring back to a boil.
  7. Boil hard for 4 minutes.
  8. Remove from heat, and let set for 30 seconds.
  9. Skim foam and pour into jars.
  10. Invert jars for 1 minute, then turn upright and let cool.
