Christmas Jam


  • 12 oz. (1 bag) Cranberries, chopped/pulsed in food processor
  • 32 oz. (2 bags) Strawberries, crushed
  • 8 3/4 Cups Sugar
  • ⅓ Cup Pacific Pectin Mix


  1. Add prepared fruit to 8 or 10 quart pot.
  2. Add Pacific Pectin Mix to fruit and bring mixture to a boil.
  3. Stir in first half of sugar, bring back to a near boil.
  4. Boil from one minute.
  5. Skim and pour.
  6. Invert jars for 1 minute then turn right upright and let cool.

Note: Strawberries tend to generate excessive foam. If desired, add Pacific Food grade Antifoam to the fruit before adding the pectin to reduce foam (before step 2).
