Pineapple Pepper Jelly Recipe

Ingredients
- 30 oz. Crushed Pineapple
- 1 Cup Green Bell Pepper, finely chopped
- 1 Cup Jalapeño Peppers, finely chopped
- 4 oz. Cider Vinegar
- 9 Cups Sugar
- ½ Cup Pacific Pectin Mix
Instructions
- Add prepared pineapple, peppers and vinegar to an 8 quart pot.
- Bring mixture to 160°F, then stir in pectin.
- Bring to a low boil for 60 seconds.
- Add half of the sugar, bring back to a boil, stir in remaining sugar.
- Bring to a hard boil, and boil for 60 seconds.
- Fill jars immediately and invert for 3 minutes. Then turn upright and let cool.
