Twistable Chocolate

Ingredients

  • 200g dark chocolate (70% cocoa or your preferred type)
  • 30g Pacific NH Pectin
  • 50g sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • Optional: nuts, dried fruits, or other desired add-ins

Instructions

  1. Prepare ingredients:
    • Chop the dark chocolate into small, even pieces for easy melting.
    • Measure out NH pectin, sugar, water, and vanilla extract.
  2. Melt chocolate:
    • In a heatproof bowl, melt the dark chocolate using a double boiler or in the microwave in short bursts, stirring in between until smooth.
  3. Prepare NH pectin mixture:
    • In a separate small bowl, mix NH pectin and sugar until well combined.
  4. Combine pectin mixture:
    • Gradually whisk the pectin-sugar mixture into the melted chocolate, ensuring it is fully incorporated.
  5. Heat water:
    • In a small saucepan, heat water until it’s warm but not boiling.
  6. Dissolve pectin:
    • Gradually add warm water to the chocolate mixture, stirring continuously to dissolve the NH pectin.
  7. Add vanilla and optional ingredients:
    • Stir in the vanilla extract and any optional ingredients like nuts or dried fruits.
  8. Cool and set:
    • Allow the mixture to cool slightly, and then transfer it to a piping bag or a plastic wrap-lined mold.
  9. Shape and twist:
    • Twist the filled piping bag or mold to create a twisted pattern in the chocolate. If using a mold, you can create twists by swirling the chocolate with a toothpick.
  10. Chill:
    • Place the shaped chocolate in the refrigerator to set completely. This may take a few hours.
  11. Enjoy:
    • Once set, your twistable chocolate is ready to be enjoyed! Break it into pieces or serve it as a unique treat.
